Infusion 101

Everyone has their own way of infusing so this wont appeal to all. With fresh herbs you can literally fill the jar and then pour in your ACV or vodka. Remember vinegar needs to be kept in the fridge, Vodka is shelf stable. For whole dried herbs you want about half a jar of herb and then filled up with ACV/Vodka. An Amber/coloured jar is best, light is not your friend. You should shake the jar every 2-5 days and after a couple of weeks you can start using. The longer the herb infuses the stronger it gets, Just leave the herb in and use a tea strainer to get out the small amount you want to take. If you wish to strain the whole jar use a nut-milk bag or a piece of muslin and really wring out that herb.
